If you believe that the old testament laws are valid, then ALL OF THE OLD TESTAMENT LAWS ARE VALID
So you'd better not be eating pork, no mixing of milk and meat, etc.
In the new testament Jesus taught that these beliefs were archaic but he reinforced the principles of brotherly love and most of the commandments
All of what the Lord says is law, therefore, when he says he will make a new covenant, that is the new promise, the new laws which we MUST now follow.
Change not one jot or title and do not think you can do away with his new teachings in order to follow the more violent ways which were necessary in the past.

Then explain to me why roughly 2/3 of the New Testament quotes the Old Testament.
The ONLY Old Testament laws that are not valid anymore are those that were specifically addressed in the New Testament. Everything other than the dietary laws and the laws regarding animal sacrifices is still in effect.
"And he saith unto them, Are ye so without understanding also? Do ye not perceive, that whatsoever thing from without entereth into the man, it cannot defile him; Because it entereth not into his heart, but into the belly, and goeth out into the draught, purging all meats? And he said, That which cometh out of the man, that defileth the man." Mark 7:18
"For every creature of God is good, and nothing to be refused, if it be received with thanksgiving:" 1 Timothy 4:4
"On the morrow, as they went on their journey, and drew nigh unto the city, Peter went up upon the housetop to pray about the sixth hour: And he became very hungry, and would have eaten: but while they made ready, he fell into a trance, And saw heaven opened, and a certain vessel descending upon him, as it had been a great sheet knit at the four corners, and let down to the earth: Wherein were all manner of fourfooted beasts of the earth, and wild beasts, and creeping things, and fowls of the air. And there came a voice to him, Rise, Peter; kill, and eat. But Peter said, Not so, Lord; for I have never eaten any thing that is common or unclean. And the voice spake unto him again the second time, What God hath cleansed, that call not thou common. This was done thrice: and the vessel was received up again into heaven." Acts 10:9-16
Re-read Hebrews 10 to understand why we don't need to sacrifice animals anymore. Absolutely everything else in the Old Testament still applies.
